LEOPARD SPOTTED CURRY RECIPE "VEGAN"


Leopard Spotted Curry recipe came about with a simple idea. What can I make with banana peels that tastes good, and not only that, but looks good? I love curry dishes and so began the experiment. You can watch the recipe video on YouTube and/or follow the step-by-step instructions below and try this goreous dish. I recommend watching the video as it goes in detail about the sellection of the bananas.

Leopard Spotted Curry Recipe ingredients "Vegan"

4 cups water
salt & pepper
2 teaspoons curry powder
1 medium potato
1/2 bell pepper
1 spotted ripe banana
1 cup coconut milk unsweetened

Step by step instructions on how to make Leopard Spotted Curry Leopard Spotted Vegan Curry

1. add 4 cups water in a wok or large sauce pan
2. add 2 teaspoons curry "yellow"
3. add salt & pepper "go light a few shakes of pepper and twice as much salt, you will salt to taste at end"
4. wash & dice one medium potato "leave peel on"
5. add potato to the wok and turn on high till it boils and then simmer
6. while you wait for the water to boil, ( make sure to stir potatoes ever so often ) wash and then dice 1/2 green bell pepper
7. let potato simmer for about 4 minutes and then add diced bell pepper
8. let them simmer as you cut ripe banana, don't worry about the fruit so much but focus on cutting banana peel in 1 inch pieces ( I used kitchen scissors for this part )
9. add banana and stir ( make sure to stir ever so often while cutting )
11. continue to simmer for 1 minute
12. while you wait prepare 1 cup coconut milk ( I love the Thai Kitchen Coconut that's in a carton "No Can Taste" and it has just 2 ingredients "water & coconut" Click this link and find out more about the product Thai Kitchen Coconut )
13. add coconut milk and stir
14. let it simmer for another minute
15. carefully taste broth and then salt to taste ( if dish not spicey enough, add 1/2 teaspoon of curry to dish until it is to your liking )
16. make sure to keep stirring
17. you can start to check to see if potatoes are done, remove two large pieces and place on plate, take fork and cut in half, potato should not be hard at all and nearly fall apart, continue to simmer until potatoes are done
18. once they are done, turn off heat and leave on burner to keep dish hot ( if for some reason there is not much broth, you can add 1/2 cup water or 1/2 mixture of water and coconut milk )
19. place a lid on the dish if you aren't going to eat it right away
20. place curry on rice and enjoy ( I find I like to drown my rice with the curry so I serve it in a bowl
21. instead of rice, you can add an extra potato and serve alone

This recipe makes about 4 servings on rice. Enjoy!
